The ‘Swiss Water’ decaffeination process (SWD) is 100% chemical free, and removes approximately 99.9% of the coffee beans’ caffeine content while preserving the original flavour characteristics of the coffee.
The beans are immersed in flavour charged water. Initially the water is caffeine-free, and as a result the caffeine diffuses from the beans into the water, Since the concentration of flavour components in the bean and in the water are equal, only the caffeine is removed, leaving the flavour intact. The water then passes through a carbon filter that traps the caffeine; flavour-charged water then flows back to the beans to remove only the caffeine. This process continues for approximately 8 hours, until the coffee beans are 99.9% caffeine free. Finally, the decaffeinated beans are removed from the water.
They are then dried, cleaned, polished, bagged and shipped – ready to then be roasted and then brewed into the best decaffeinated coffee you’ll ever taste!
The gigantic islands of the Malay Archipelago, bring a coffee which is grown on the island of Sumatra and is noted for its richness, full body, and the acidity, although pronounced, is deep toned and gentle. Sumatra coffee is probably the most full-bodied coffee in the world: you can feel the magnificent full body, and almost syrupy richness settling in the corners behind your tongue. It has a relatively low acidity, but enough to keep the cup vibrant and interesting for a decaffeinated coffee.
All of our Swiss Water Decaffeinated coffee is freshly micro roasted by us in St Thomas, Ontario. When you order some from our online store, you receive a bag of coffee beans that is very much a premium product, where the aromas and flavours will be exceptionally delicious, and remarkably better than what you may be used to from a traditional decaffeinated coffee.
